BREAKFAST BURRITOS

Prep: 10 mins | Cook: 15 mins

Makes: 4 burritos

Ingredients:

  • 4 eggs
  • ¼ cup 1% milk
  • salt, pepper, and chili powder to taste
  • 1 teaspoon oil
  • 4 (10 inch) flour tortillas
  • 1 cup fat-free refried beans
  • ½ cup (4 ounces) grated cheddar cheese
  • 1 tomato, chopped

Directions:

  1. Mix eggs, milk, and seasonings in a bowl.
  2. Heat oil in skillet over medium-high heat (350 degrees in an electric skillet).
  3. Stir in the eggs and cook until firm.
  4. Warm the tortillas on a griddle, or wrap in foil and heat in the oven.
  5. Warm the refried beans in a separate pan.
  6. On each tortilla, layer 1/4 of refried beans, eggs, cheese, and tomato.
  7. Roll the burrito, cut in half, and enjoy!
  8. Refrigerate leftovers within 2 hours.

MY PERSONAL PIZZA

Prep: 10 mins | Cook: 15 mins

Makes: 1 pizza

Ingredients:

  • 1/2 english muffin
    1 ½ tablespoons pizza sauce or spaghetti sauce
    1 tablespoon grated cheese
    4 tablespoons chopped vegetables, fruit or cooked meat (try a combination)

Directions:

  1. Preheat oven to 400 degrees F.
  2. Lightly toast English muffin half.
  3. Spread sauce on muffin. Add cheese and
  4. toppings of your choice.
  5. Bake 5 to 7 minutes, or until muffin is lightly browned and cheese is melted. Allow to cool slightly before eating.
  6. Refrigerate leftovers within 2 hours.

PERSONAL SALAD IN A BAG

Prep: 10 mins 

Makes: 2 cups

Ingredients:

  • SALAD (1.5 cups total per person)
    leafy green vegetables, tomatoes, cucumbers, olives, onions, garlic, avocadoes, grated or diced cheese, cooked beans
    DRESSING
    1 teaspoon bottled dressing; or mix together the following:
    ½ teaspoon vegetable oil
    ½ teaspoon lemon juice or vinegar
    1 pinch of salt and pepper
    TOOLS
    1 closable plastic bag
    can opener (if using canned food)
    cutting board
    knife (for vegetables)

Directions:

  1. Wash all fresh foods. Tear or cut any foods that are larger than a quarter.
    Place food for salad in plastic bag. Add dressing to bag.
    Close opening of bag securely. Shake bag well.
    Refrigerate leftovers within 2 hours.

The Klamath Food Challenge is designed for everyone to enjoy!

Directions:

  • Download and print a passport here or pick up a passport at a participating location and tell your friends to grab one, too!
  • Put the date next to each challenge activity that you completed. You can complete activities more than once. Each activity completed will be one entry in the drawing.
  • Once you have completed a minimum of five activities, submit your passport in person or by mail, the first 50 submissions will receive a commemorative magnet or sticker.
  • The drawing will take place during the second week of October and winners will be notified by October 15th.
  • All participants must submit their passports in person or by mail by October 4th, 2021 to be eligible for prizes.
